Creamy Artichoke/Oyster Bisque(8 servings)

 

 

½ cup butter

1 cup chopped onions

2 tlbs. Chopped garlic

1 ½ cups chopped green onions

1 dozen raw oysters(small)

2 cups drained artichoke hearts, chopped

1 can cream of mushroom soup

1 can golden mushroom soup

1 can(10 ¾ oz) chicken broth

4 cups water

1/8 teas. Red pepper

¼ cup chopped parsley(can be omitted)

 

 

Sasute onions and garlic in melter butter for 10 minutes

Add oysters and sauté with onions and garlic until they turn on the edges.

Add artichokes and sauté again

Stir in mushroom soups and chicken broth

Cook slowly for 3 minutes

Add water, red pepper, and chopped parsley and simmer for 10-15 minutes.
